It's Fall in My Book

I know it's still in the 90's outside and there's like 3 possible hurricanes STILL heading our way, but it's September, DARN IT, and I've decided it's time for Fall! There is nothing better than the smell of fresh granola and since my kids turn into hellions if they have too much sugar, this is the amazing alternative I've found. If you're ready for fall, you should try this...it's SOOO quick and easy that Brody and I made it together in the 20 min. we had to kill before naptime (and Taryn wasn't ignored long enough to completely destroy my house!).




Low Fat Granola
Preheat oven to 325. Combine 1/3 c. fresh squeezed orange juice, 1/2 c. honey, 1 t. cinnamon, 1/2 t. vanilla, and 1/2 t. orange peel in a sauce pot and heat over med.-high, stirring occasionally until honey is melted. In another bowl, combine 3 c. oats, 1/4 c. wheat germ, 1/4 c. flaxseed meal, 1/2 c. chopped nuts, (and I obviously added a handful of raisins). Pour honey mixture over oat mixture and mix thoroughly until well coated. Spread mixture evenly onto baking sheet and bake 15 min. Take out and stir and bake another 5 min. Take out and sprinkle 1/2 c. flaked coconut over and bake final 10 min. Remove, cool and freeze for the best crunch!
