So I made a delicious creation for dinner tonight. I had all this left-over macaroni in my fridge from my latest batch of home-made mac 'n cheese (another FABULOUSLY easy recipe BTW), and I really wanted to make minestrone, but of course I just decided this at about 3 pm today which left me no time to take a trip to the grocery store (which is like a 5 hr. minimum time committment with two kids!). So I got creative, and I must say it turned out to be pretty tasty!! I call it "Lazy Ladies Minestrone" because I'm too lazy to chop, measure, or even defrost...heck...I probably wouldn't have made it if I hadn't already had the macaroni cooked! :)
Lazy Ladies Minestrone
1. Boil a pot of water and add a few globs of base (or buillion cubes for all you fancy folks!)
2. While you wait for the water to boil, brown 1 lb. of ground beef with garlic salt, chili powder (if you like spicy) and minced onion (you can chop an onion if you want to change the name to "You-Obviously-Don't-Have-2-Kids Ladies Minestrone")
3. Add a can of chickpeas (or whatever beans you have in the cupboard), the macaroni noodles (they probably wouldn't even have to be cooked already), frozen mixed veggies, and the meat
4. Season to taste with italian seasoning and parmesian cheese and let simmer till you're ready to eat (since my noodles were already cooked, this was ready in 10 min.!)
5. Now this is where it gets good!!!!.....Cut up one string cheese per bowl and pour soup over the cheese (again, you can use whatever cheese you want, but string cheese is a staple in our house!).
